Mouth filling citrus fruit flavours including lime, ripe sweet grapefruit, and Meyer lemon. Stone fruit characteristics also creep into this vintage reminiscent of plush nectarine. The wine finishes with a touch of honey, granny smith apple, slatey minerality and our signature racy tension and acidity that these vines in our most granitic block create.

Selectively hand harvested and whole bunch pressed with extended skin contact in press. Cold settled and fermented icy cold for 21 days to enhance varietal expression, preserve the intense aromatics and encourage the presence of the mineral flavours in the wines finish. Fermentation was stopped with slight residual sweetness to balance the acidity.
Food Pairing Notes
Those cool people in your life. This wine is the all-time first choice to pair with sharp hard cheeses. A go-to food favourite versatile enough to serve with fresh fruits, salads, oysters (raw and or smoked), and most crustaceans. However if food is hard to find it is still delicious chilled on it’s own. Serve between 3-6 degrees Celcius in a white aromatic glass.
